One of the most famous is the rose of the Turkish town of Halfeti, which locals call "karagül" — "black rose". Let's separate fact from beautiful myth.

In short: there are no truly black roses in nature. Halfeti roses are a very dark red variety that turns almost black in a hot summer. They aren't exported, so florists sell dark burgundy varieties or dyed roses instead.

Where Halfeti roses grow

Halfeti is a small town in Şanlıurfa Province in south-eastern Turkey, on the banks of the Euphrates. In 2000, after the Birecik Dam was built, the water flooded the old part of the town and several nearby villages. Residents were moved to "New Halfeti", about 10 km away, while a minaret and the ruins of houses remain above the water — now a tourist attraction reached by boat.

Residents moved their roses to the new site, but the plants struggled to adapt and black roses became noticeably rarer. Today they're grown in local gardens and nurseries, and the black rose is Halfeti's calling card.

In spring karagül buds are dark red like ordinary roses. As the heat arrives the petals turn deep burgundy, and at the height of summer almost black. This is thought to result from a variety rich in anthocyanin pigments combined with the hot climate and particular soil: groundwater from the Euphrates changes the soil acidity so the pigments accumulate more. Outside Halfeti, the same roses usually stay simply dark red.

The roses usually reach their darkest colour only in midsummer, and cut flowers don't travel well, so natural Halfeti roses are virtually never sold outside the region. Most "Halfeti black roses" offered online are ordinary dark varieties or dyed flowers.

What a black rose symbolises

Black roses are often associated with mourning and farewell, but they carry other meanings too: mystery, strength of character, new beginnings, individuality. So dark roses are given not only on sad occasions:

  • at gothic or vintage-style weddings;
  • for Halloween and themed parties;
  • to creative people and lovers of the unusual;
  • in contrasting black-and-white bouquets — an elegant classic.

True black roses don't exist, but breeders have created very dark varieties — deep burgundy, almost black with a velvety sheen:

How to make black roses yourself

Florists use special dyes, but you can get a similar effect at home:

  1. Choose white or pale roses — the dye takes more evenly. Dark red roses also work for a deep shade.
  2. Dissolve flower dye (sold in florist supply shops) or a strong food colouring in warm water.
  3. Recut the stems at an angle with a sharp knife; you can split the end by 2–3 cm.
  4. Stand the roses in the coloured water at room temperature for 15–24 hours — the dye rises through the stems into the petals.
  5. Then move the flowers to clean water.

Ink, mascara and markers don't work — they clog the stems and the roses wilt quickly. A faster alternative is florist spray dye applied directly to the petals.

Do natural black roses exist?

Not truly black ones. The darkest are Halfeti roses and varieties like Black Baccara — a very deep burgundy.
